Preheat the oven to 180°C (356°F).
Mix the dried coriander, ginger, lemon pepper, turmeric, vinegar, olive oil, garlic, and salt to marinate the chicken.
Add potatoes and 1/4 cup of water.
Bake in the oven for 40 minutes, covered.
Finally, drizzle with lemon juice, garlic, olive oil, fresh coriander, and a little red pepper before serving.
